Notes: Super good. Don't double recipe ;) Update: We might want to even half this recipe because it is heavy and makes a lot!
Ingredients
- 4 cups heavy cream
- 4 oz cream cheese
- 2 tsp salt
- 2 tsp white pepper
- 2 tsp paprika
- 2 tsp garlic powder
- 2 tsp onion powder
- 1 box macaroni (I think this is like 2 cups or something?)
- 8 tsps unsalted butter
- Handful minced garlic
- 1 minced shallot
- 3 tbsp all purpose flour
- 8 oz grated cheddar cheese
- 8 oz grated white cheddar
- 8 oz grated gruyere (can substitute with other cheeses)
Directions
- In a big pot, melt cream cheese in the heavy cream on low heat, also adding in the salt, white pepper, paprika, garlic powder, and onion powder. Stir so cream doesn't curdle and set to the side.
- Prepare macaroni, and save ½ cup of the pasta water and set to the side.
- In the same pot (after draining and setting macaroni to the side), saute shallots and garlic in the butter for about 2–4 minutes before stirring in the flour. Saute again until slightly golden.
- Add in the cream, pasta water, and cheese. Mix on low to medium heat until all melted through, then toss in macaroni and even coat.
- Layer in an oven safe dish the pasta, then favorite cheese (cheddar is the best), then pasta, then another cheese layer.
- Bake at 350 for around 10 minutes or until you are satisfied with the top layer of cheese.
