Roast Potatoes

Crispy potatoes that are soft on the inside.

  1. Peel, wash, and cut potatoes into 1 inch cubes.
  2. Add potatoes to a pot of salted water and bring to a simmer.
  3. After like 10 minutes, replace the water to remove the starch and continue to cook. You want a fork to go in easily as if you are making mashed potatoes.
  4. Add to a baking pan with vegetable oil, garlic, rosemary, and salt. Toss to coat potatoes with oil.
  5. Bake at 350 degrees F for 30 minutes.
  6. Toss potatoes and add more rosemary and salt.
  7. Bake for another 30 minutes.
  8. Toss potatoes.
  9. Bake for another 20 minutes.
  10. They should be crispy, but soft on the inside.
