Ingredients
- 2 chicken breasts, thinly sliced
- 3 cloves garlic, minced
- 6 strips bacon, cooked, chopped
- 5 oz spinach
- 2 teaspoons salt
- 2 teaspoons pepper
- 2 cups half and half
- 1 ¼ cups rotini pasta, cooked
- 1 cup parmesan cheese
- ½ cup fresh parsley, chopped
- 2 tablespoons oil
- 2 tomatoes, diced
Directions
- Cook bacon and pasta first. Set pasta aside and chop bacon.
- In a big pot, heat oil then add chicken and garlic. Cook thoroughly on medium heat. Add tomatoes, then after about a minute or two, add spinach. Let spinach shrink to a more manageable size before adding the half and half, salt, pepper, and parmesan cheese.
- Turn heat to medium-low and stir continuously (to prevent curdling) until the cheese is melted. Add bacon bits and parsley.
- Turn heat off and mix in pasta. Let sit for a minute and let the cream sauce thicken a bit before mixing again and serving.
